Sample Day — Elevated Chalet Experience

 

Breakfast:
Hand-laminated croissants with cultured butter from Quebec farms • Soft herb eggs finished with chive sabayon • Smoked Atlantic salmon with yuzu–caper emulsion • Seasonal fruits lightly cured in citrus blossom syrup & verbena oil

Lunch:
Foraged-greens salad with toasted buckwheat, shaved fennel, and a shiso–kombu vinaigrette • Chef’s daily handmade pasta (purple cauliflower, sweet corn, or confit tomato) finished with Parmesan espuma • Fire-kissed local protein (Arctic char with citrus kosho, heritage chicken with miso jus, or roasted maitake with ponzu brown butter)
